Cloud Bread Recipe Share: This is How we make Oopsie Bread

Cloud Bread Recipe:  People have been asking me how I make my Cloud Bread.

 

I don’t, and can’t take any credit for it.

But, my mother who believes in me, and is always very supportive to help me to stay on my program does my baking of cloud bread and other things.

 

Mom recently made me a huge batch of cloud bread for my freezer (Yes, You can freeze cloud bread!). She also tried a variation on the recipe.

The first is our traditional recipe using Cream Cheese, and the second is using mayonnaise instead of cream cheese. In this post, I will share the recipes for both types of Oopsie Bread, and along with some great pics she took.  Thanks mom!

I Was Surprised This Week PLUS Something I’m Not Quite Ready to Share Yet

fat doesn't make you fatSaturday was officially 2 full months since I started this way of eating (starting on August 3rd). I have been on a plateau for several weeks. Which is actually very frustrating because I’ve been working it so hard. I haven’t had anything at all that would be considered a “cheat”.

  • I haven’t had any chips (which is my biggest, baddest comfort food)
  • I haven’t even had one Diet Pepsi (which I normal would have 3-4/week)
  • I haven’t had one slice of bread, bun NOTHING
  • I haven’t been eating any kind of high carb fruits

I have been eating soooooo  clean!!! But regardless, plateaus will happen anyway.  My point is DON’T GIVE UP when you are going through the plateau!!! Continue reading

Visit to My Doc and Special Birthday Celebration

I did have my doctor’s appointment yesterday to get the results from the blood-work I had done last week. Being “pre-diabetic” I am required to get my sugars tested once every three months. I also had him test my cholesterol this time so that I have a base line to compare it in future.

Well The Results Are In:

I have been working this way of eating (low carb, high fat) for only 1 months. I started on August 3rd. So really when I got my blood work taken, I had only been on this for about 25 days out of the 3 month period. In that time I had adjusted my Metformin from 2 tabs a day down to one (without my doctors knowledge or instruction). Continue reading
