Recipe Fail that turned out Delicious!

Well I’m tired of Zucchini, I’ve been having it a lot!!

Thought today I would try something new.  I’ve mentioned on social media, I am really super tired of cooking everything.  I need to cook healthy for me, but lack of time and imagination has caused me to just really cook the easy old go-to’s from days gone by.

On the plus side…. At least I have been cooking low carb for me, even it the family doesn’t eat what I eat.

I can usually add a side for me that is healthy (and my go to has been zucchini, that’s why I’m so tired of it.), or if they are having something that is TOTALLY off plan (like they will tonight), I can always make up some cheesy eggs.

Anyway yesterday I decided I’d better get off my butt and cook something.

I had some chicken drumsticks in the freezer so I threw them in the crock-pot and went online to find a low carb honey garlic sauce.  The recipe was for a very small amount of sauce for chicken that was cooked on top of the stove.

I didn’t want to do that, I was using the slowcooker.

I love my slowcooker, and I use it all of the time.  I have really, really been thinking about getting a new Instant Pot though.  I actually have some Amazon gift cards to use., so I may just do that.

Do you have an Instant Pot?  What do you think of it?  I’ve heard they are amazing.

Long story short, I modified the recipe by adding extra water and increase the amounts of other items (but not in proportion).

I often don’t follow the recipe and just use it as a guideline.  Sometimes it works….. and sometimes…..

I planned to do mashed cauliflower for me, and rice for the rest of the family.

The chicken cooked up nice – but I had entirely too much sauce….

Modification FAIL lol

Like WAY too much and the chicken kind of look a bit what’s the word…  anemic lol.  It didn’t look very good at all.  So I threw it in the oven to brown it up.

I steamed a head of cauliflower and then mashed it up adding butter.

 

Overall, after the chicken was nice and brown, it tasted really good and my older kids, and my baby gobbled it up like nobodies business.

My toddlers have been very finicky lately about what they will and what they won’t eat.  If one of them doesn’t like something, magically they BOTH refuse to eat it LOL.  They are very much into the monkey see monkey do thing lately.  I think that’s a whole discussion for another day though.

Tonight (during the middle of our Alberta blizzard) We are just going with chicken nuggets and fries for the fam-jam.  I will have some cheesy eggs.

What are some of YOUR recipe fails…. or even better, What are some of your favorite meals to cook for you and the kids that will help you stay on your game?

Speaking of the family, I guess it’s that time.  I need to go and get them.
