Low Carb Recipe Share that I was Thrilled to find!

One thing I have missed for a long time with my low carb life are sandwiches.

Most ordinary sandwiches I can substitute cloud bread and all is well.  Sandwiches that require toasting don’t work so good with the cloud bread though.

I saw a friend of mine post something called 90 second Keto Bread yesterday on her Facebook page.  Hmmm interesting I thought.  Right there, I made a plan to have grilled cheese sandwiches for dinner last night.

I need something quick and easy as I was out picking up kids and wouldn’t have any time for drawn out lengthy meal prep.  When the kids get home, they are HUNGRY!!

Perfect.

I just googled the recipe and took the first one that came up.  It was from Low Carb With Jennifer.  

The recipe is very simple, and you mix it in a dish, throw it in the microwave for 90 seconds  and Presto!  (Why have I never heard of this before lol)

90 Second Keto Microwave Bread

  • 3 tbsp almond flour or 1 1/3 tbsp coconut flour
  • 1 tbsp oil (melted butter, melted coconut oil, avocado oil)
  • 1/2 tsp baking powder
  • 1 large egg
  • tiny pinch of salt

So I gave it a try.  I mixed up enough for 2 pieces of the bread, and put it in the microwave for 2 minutes 45 seconds.

I put them into one of my kids sandwich lunch box containers because that was the approximate size I needed (about 4 inches x 4 inches)


I mixed it all up and then banged out the air bubbles before putting it in the micro.

I thought it turned out pretty decent for my first attempt!  The pieces were fluffy but dense and much thicker than a normal slice of bread.

Next, I just used the pieces to make a grilled cheese sandwich as per normal, buttering the one side to make them brown up nicely.

I am really happy with how it turned out.

YAY I get to enjoy grilled cheese sandwiches with the family again!!  I wonder how they would work for a toasted tomato sandwich.  I LOVE those!

The slices were really quite thick and the sandwich was VERY filling.

Here are the Macros for it.

It came out at 82% Healthy Fat and only 3 net carbs per piece, and I’m totally okay with that 🙂
